Clare Chen, founder of Hudson Valley Breads, is a micro-baker with a passion for crafting rustic sourdough using traditional methods she honed at Le Cordon Bleu in Paris. As a Taiwanese American, she uniquely blends Western bread-making techniques with Eastern flavors and aesthetics, giving her creations a distinctive flair. Her signature Danish Loaf (a.k.a. croissant bread) is a standout example of this fusion, offering customers a bread experience that is both familiar and excitingly unique. Another standout is the Black Forest Sourdough, a rich cocoa-infused loaf with bursts of juiciness from cherries, offering a delightful balance of flavors. You won't find Clare's unique creations anywhere else.
